In the bowl of a stand mixer combine the butter and sugars. Beat until fluffy.
Add in the egg and vanilla extract, mixing on low speed.
In a medium bowl mix together the flour, baking soda, and salt.
Using a rubber spatula, fold the dry ingredients into the sugar mixture until combined.
Mix in the chopped chocolate chunks.
Line a baking sheet with parchment paper.
Using a cookie scoop, portion out all the dough and freeze until set (~ 15 minutes).

Preheat the oven to 360F. Bake for 12 minutes and top with coarse finishing salt.
