Freezer Friendly Chocolate Chip Cookies

Ingredients

  • 1 stick salted butter
  • 2 tablespoons white sugar
  • 1/4 cup turbinado sugar
  • 3/4 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 3/4 cups AP flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1 1/2 cups bittersweet chocolate chunks you may use chocolate chips or chop 12 ounces solid chocolate as well

Instructions

Make Dough

  1. In the bowl of a stand mixer combine the butter and sugars. Beat until fluffy.

  2. Add in the egg and vanilla extract, mixing on low speed.

  3. In a medium bowl mix together the flour, baking soda, and salt.

  4. Using a rubber spatula, fold the dry ingredients into the sugar mixture until combined.

  5. Mix in the chopped chocolate chunks.

If freezing...

  1. Line a baking sheet with parchment paper. 

  2. Using a cookie scoop, portion out all the dough and freeze until set (~ 15 minutes).

  3. Store in the freezer in a freezer-rated plastic bag. When you are ready to eat follow baking instructions...

If baking immediately...

  1. Preheat the oven to 360F. Bake for 12 minutes and top with coarse finishing salt.
