Totchos
Okay, so I know today is the 6th of May. Still, who doesn’t love more Mexican-themed dishes with tons of options for yummy toppings! Also, this totchos recipe is unbelievably easy. It would be a great dish to make for a game-day party, I know it’s unfashionable out in California but in our household we’ve got an SEC countdown going (War Eagle!). It doesn’t take too much time so if you are looking for a snacky dish that is warm, this is a great one to make.
Tot·chos [n.] = part tater tot, part nacho. A deliciously crunchy, salty, cheesy snack.
Basically, you are making nachos, hold the chips, add tater tots!
Totchos
Ingredients
- 1 bag onion tater tots
- 1 garlic clove, minced
- 1/2 green bell pepper, diced
- 3 cups shredded cheese we used fontina and cheddar
- 1/2 teaspoon kosher salt
- 1/4 teaspoon paprika
- optional to top: cilantro, green onion, chorizo
Instructions

Preheat the oven to 425 convection.

Chop all of the vegetables and set aside.

Place frozen tater tots in a 9×13 baking pan, and bake in the preheated oven for 15 minutes.

Add the garlic and stir. Cook for an additional 10 minutes.

Add the peppers and cook for an additional 5 minutes.

Add the cheeses and cook until melted, roughly 5 additional minutes.

Top with spices and any optional add-ons. Serve immediately.
