Totchos

Okay, so I know today is the 6th of May. Still, who doesn’t love more Mexican-themed dishes with tons of options for yummy toppings! Also, this totchos recipe is unbelievably easy. It would be a great dish to make for a game-day party, I know it’s unfashionable out in California but in our household we’ve got an SEC countdown going (War Eagle!). It doesn’t take too much time so if you are looking for a snacky dish that is warm, this is a great one to make.

Tot·chos [n.] = part tater tot, part nacho. A deliciously crunchy, salty, cheesy snack.

Basically, you are making nachos, hold the chips, add tater tots!

Totchos

Ingredients

  • 1 bag onion tater tots
  • 1 garlic clove, minced
  • 1/2 green bell pepper, diced
  • 3 cups shredded cheese we used fontina and cheddar
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon paprika
  • optional to top: cilantro, green onion, chorizo

Instructions

  1. Preheat the oven to 425 convection.

  2. Chop all of the vegetables and set aside.

  3. Place frozen tater tots in a 9×13 baking pan, and bake in the preheated oven for 15 minutes.

  4. Add the garlic and stir. Cook for an additional 10 minutes. 

  5. Add the peppers and cook for an additional 5 minutes.

  6. Add the cheeses and cook until melted, roughly 5 additional minutes.

  7. Top with spices and any optional add-ons. Serve immediately.
