Sweet Potato Casserole
Vegetarian sweet potato casserole, updated with new pictures and recipe card in October 2019.

Many people think of winter as being a bad season for vegetables, but there are a ton of delicious veggies that come into season just in time for Thanksgiving! Sweet potatoes are one of those vegetables. They are such a great addition to any meal, but whether in casserole or pie form, they certainly play an important part in most Thanksgiving spreads!
This recipe for sweet potato casserole is incredibly easy to make, so if you’re ever in a hurry to pull together a side for the holiday meal– this is a good one to scramble together!
I opted for marshmallows as the topping here, but a little butter-pecan-cornflake-brown sugar combination never went down wrong either. You’re welcome to experiment with either, but I found the marshmallow option faster and less fussy!

Sweet Potato Casserole
Ingredients
- 4 medium, sweet potatoes
- 1 stick salted butter
- 1/4 cup brown sugar
- 1/4 cup whole milk
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- miniature marshmallows to top
Instructions
Bake the sweet potatoes

Wash the potatoes and line a pan with parchment paper or foil.

Preheat the oven to 400F and bake them for about an hour or until they are soft and oozing sugar.

Remove them from the oven and reduce the oven temperature to 350F.
Assemble casserole

While the potatoes are cooling, melt the butter.

In a large bowl, combine the butter, sugar, milk, egg, and extract, whisking vigorously.

When the sweet potatoes are cool enough to handle, skin them and add them to the bowl along with the salt.

Mash everything together until it is blended but still just a little chunky.

Butter a casserole dish and fill it with mashed potatoe mixture.
Bake

Bake for 20 minutes at 350F.

When it is done, add the marshmallows and bake for an additional 5 minutes.

If needed, broiler can be used to get a toasted finish on the marshmallow topping.
