Pressure Cooker Sütlaç
Many years ago I spent a few months in Turkey and while I will always remember the wonderful hospitality of the people there, I will have even fonder memories of their amazing food. Every store owner greets you with a piping hot apple tea, tart and sweet and the perfect treat to sip while you walk around. Street vendors serve up potato gözleme– large, stuffed flatbread, grilled on a saç. And for dessert: sütlaç! A Turkish rice pudding that is creamy, sweet, and spiced.
Any form of rice pudding generally requires some babying at a stove for several hours, and unsurprisingly, this is difficult to accomplish with actual human babies running around the house.
My Instant Pot came to the rescue again and I managed to throw this sütlaç together in under half an hour while baby wearing the 1 year old. I feel very confident that this is the easiest homemade rice pudding is ever going to be.
It can be served hot or baked in the oven.
Pressure Cooker Sütlaç
Ingredients
- 1 cup Basmati rice
- 1 cup cold water
- 1 cinnamon stick
- 1 tablespoon butter
- 1/4 teaspoon grated nutmeg
- 2 cups milk, divided
- 1/2 cup sugar
- 2 eggs
- 1/2 teaspoon vanilla extract
Instructions

Rinse the rice and place it in the instant pot. Add in the water, butter, cinnamon, and nutmeg.

Cook on high pressure for 3 minutes and then allow to natural release for 10 minutes.

When the rice is done, add 1 1/2 cups of milk and all of the sugar. Stir together and turn the instant pot on sauté mode.

In a small bowl, measure the remaining 1/2 cup milk, eggs, and vanilla. Whisk together and pour them into the rice mixture THROUGH a fine strainer. You can use the same strainer as you did to rinse the rice.

Sauté until just boiling and then remove from heat. The pudding will thicken the more you let it sit, but it is ready to eat whenever.

After refrigeration, reheat in the microwave or on the stovetop prior to serving.
