Pimento Cheese Spread

Pimento cheese spread is a Southern delicacy. The Master’s made it famous, and tea-sandwich-filled luncheons have kept it in style.

Like any good Southern spread, it’s got mayo in it. Like any good Southerner, I have to say it is best made with Duke’s Mayo. Traditionally, pimento cheese spread is served on white bread. I’ll vouch that this recipe is good on white bread, crackers, a wheat bread like this one, or even by itself!

It will take only five ingredients and you’ll spend less than five minutes making it. Don’t get too fancy with the ingredients for this one. Buy the pre-shredded, generic cheese and the canned pimiento peppers. Use whatever brand of spices you’ve already got on hand. When I first threw this together it was because I didn’t have the energy to attempt a grocery trip with two toddlers and also had exactly zero other ideas for lunch, and it is in that spirit that I share this recipe with you today. Pimento Cheese Spread

Ingredients

  • 2 cups shredded cheddar Finely shredded is ideal, a Mexican blend will work as well
  • 1/2 cup Duke's mayonnaise (heaping)
  • 2 tablespoons diced, canned pimentos
  • 1/4 teaspoon onion salt
  • 1/4 teaspoon paprika

Instructions

  1. Combine all ingredients in a medium bowl and mix thoroughly with a rubber spatula.

  2. Serve on white bread (most traditional), crackers, or in any other way you like!
