Parmesan Flatbreads
These parmesan flatbreads, inspired by Smitten Kitchen, are crispy crackers elevated with a little thyme and honey. Top with flaked salt for an extra crunch. They have very few ingredients and are SO quick and easy to make.
In fact, this was the first recipe I made with my 2 year old son. He enjoyed the short tasks that were separated by breaks for baking. Due to its short bake times and simple steps, this is a really great recipe for younger cooks with shorter attention spans.

How to Include Your Kiddos
- First- this recipe is NOT for babies under one year. No honey or contact with honey for those sweeties.
- For kids ages 2-4 they can mix the dough, roll the dough out, and sprinkle the cheese on. Keep in mind their short attention spans, and don’t stress if they need to duck in and out.
- For older kids they can measure out ingredients and help pick out thyme leaves. They should also be able to help drizzle the honey without making too much of a mess!
- A 4 year old or 5 year old with budding knife skills can chop the final product into strips with a pizza cutter or safety knife.
- If your child is old enough to be reading, set them loose on this recipe and see how they do! It is so basic and truly they may only need assistance with the oven.
- Math Practice : I love the idea of helping your kid practice math (maybe fractions?) while separating the dough into four equal pieces. Have them divide the dough in half and then divide each half into two pieces!
Parmesan Flatbreads
Ingredients
- 1 3/4 cups AP flour
- 3/4 teaspoon kosher salt
- 1 teaspoon baking powder
- 1/2 cup water
- 1/3 cup olive oil
- 1 cup grated parmesan cheese
- 1/2 cup honey
- fresh thyme (1 bunch)
- maldon salt (optional)
Instructions

Preheat the oven to 450F and place a pizza stone in the upper 1/3.
Make the dough

Whisk together the flour, salt, and baking powder.

Add the water and olive oil and stir with a spoon or rubber spatula until all the flour is moistened.

Knead into a ball and work dough until it comes together completely and feels oily. (Not long!)
Roll out flatbreads

Divide the dough into four equal pieces.

Roll each piece out very thin on a sheet of parchment paper.
Bake and top

Working with one flatbread at a time, bake on parchment paper and pizza stone for 5 minutes. Top generously with cheese, and bake an additional 5 minutes.

After cheese is slightly browned, remove and drizzle well with honey. Sprinkle with fresh thyme and salt.

Cut into rectangles and serve!
